## Tejuino Recipe

Ingredients:

- 1 pound masa harina

- 2.5 cups water

- 1/4 cup piloncillo (Mexican brown sugar)

- 1/2 teaspoon baking soda

- 1/4 cup lime juice

- 1/4 teaspoon salt

- Ice cubes

Instructions:

1. In a large bowl, whisk together the masa harina, water, piloncillo, baking soda, lime juice, and salt until smooth.

2. Cover the bowl with plastic wrap and let it sit at room temperature for at least 6 hours or overnight.

3. After the dough has fermented, strain it through a fine-mesh sieve into a large pot.

4. Bring the tejuino to a simmer over medium heat, stirring constantly. Cook it until it has thickened slightly, about 10 minutes.

5. Remove the pot from the heat and let it cool to room temperature.

6. Serve the tejuino cold with ice cubes.

Tips:

- Tejuino can also be made with the following fruits: pineapple, mango, or cantaloupe.
