What vegetables did the Tudors eat?

Tudors ate several vegetables, including:

- Roots and tubers: Turnips, carrots, beets, onions, garlic, shallots, leeks, and parsnips.

- Greens and leaves: Lettuce, spinach, cabbage, kale, chard, and sorrel.

- Pulses: Peas, beans, lentils, and chickpeas.

- Cucurbits: Cucumbers, melons, squashes, and pumpkins.

- Brassicas: Broccoli, cauliflower, Brussels sprouts, and kohlrabi.

- Alliums: Onions, garlic, shallots, and leeks.
