What Is Pomegranate Molasses?

Pomegranate molasses is a Middle Eastern pantry staple used in a variety of dishes from the Turkish dip known as muhamarra to the festive Persian poultry dish fessenjan. You can use it to glaze lamb chops or dress a salad. Pomegranate molasses may seem exotic, but in essence, it's a concentrated pomegranate juice.

Concentrated Pomegranate Juice

  • Pomegranate molasses isn't really molasses at all, although its thick consistency and sweet-tart flavor certainly evoke it. Rather, pomegranate molasses simply is pomegranate juice boiled down to a thick, sweet-tart condiment. Sugar sometimes is added or omitted. This latter style sometimes is labeled "pomegranate concentrate." Pomegranate molasses is sold in glass bottles in Middle Eastern groceries, gourmet food shops and increasingly in the specialty aisles of large grocery stores. It's also fairly easy to make your own if you start with prepared pomegranate juice.
