How to Make a Seafood Burrito (8 Steps)
For a fresh, low-fat take on the traditional burrito, prepare a filling with seafood as -- rather than the usual meat and cheese -- as the key ingredients. Seasoned with a Mexican-style marinade, seafood filling is satisfying enough by itself to stuff a tortilla. But you can also add salsa and savory spread, such as guacamole or mayonnaise with a small amount of lime juice and zest. Tropical fruit salsas pair well with seafood dishes -- or stick with the classic tomato salsa.

- Whisk
- Lime juice
- Olive oil
- Salt
- Pepper
- Mexican spices, such as curry powder and ground chili
- Mexican herbs, such as oregano and cilantro
- Chef's knife
- Seafood, such as fish fillets, scallops, peeled shrimp or calamari
- Spoons
- Skillet
- Spatula
- Fine-mesh colander
- Tortillas
- Paper towels
- Savory spread, optional
- Fruit or tomato salsa, optional

Make a marinade by combining 1 part lime juice to 2 parts olive oil. Season it with salt, pepper, and a few tablespoons of Mexican spices and chopped fresh herbs.

Cut seafood into 1-inch strips or chunks. Put the pieces in the marinade bowl and gently toss them, leaving the seafood to marinate in the refrigerator for about 30 minutes.

Heat a small amount of olive oil in a skillet on medium-high heat. Drain the marinated seafood.

Add the seafood to the skillet in a flat, single layer. Cook for about two minutes, then flip the pieces over and cook for one to two more minutes. If you are using mixed seafood, some types may take longer than others; remove them separately, if necessary. The flesh will turn from clear to opaque when cooked through.

Set a stack of tortillas in the microwave, covered with a damp paper towel. Heat the tortillas on high for about 25 seconds to warm and soften them.

Spoon a wide stripe of savory spread across the center of a tortilla. Top it with a generous spoonful of the seafood mixture. If using a salsa, set a small amount on top of the seafood.

Fold the side of the burrito closest to you up and over the filling, and fold the left and right sides toward the center. Roll the burrito away from you until it is tightly secured.
