How to Cook Milanesa de Pollo (7 Steps)

Have you ever heard of milanesa de pollo or spotted it on a menu at a Mexican restaurant and wondered what it is? Milanesa de pollo is lightly fried, breaded chicken, sort of a Latin-American version of chicken Parmesan or chicken-fried chicken. It requires few ingredients and is easy to prepare, making it a perfect dish to try at home.

Things You'll Need

  • Boneless chicken breasts
  • Olive or vegetable oil for frying
  • 2 eggs
  • 1 tbsp. olive or vegetable oil
  • Salt and pepper
  • Dried oregano (optional)
  • 2 cups bread crumbs
  • Flour

Instructions

  1. Use a meat hammer or rolling pin to pound the chicken breasts flat.

  2. Heat up a small amount of olive or vegetable oil in a frying pan over medium heat. Use just enough to coat the bottom of the pan.

  3. Sprinkle the flattened chicken breasts with salt, pepper and, if desired, oregano.

  4. Beat the eggs and 1 tbsp. olive or vegetable oil in a pie dish. Place a layer of flour on a dinner plate and the bread crumbs on a separate dinner plate.

  5. Roll the seasoned chicken breasts in the flour, then dip them in the egg. Lay the chicken breasts in the bread crumbs, pressing each side of the breasts down into the crumbs. Set the chicken breasts on a wire rack while the bread-crumb mixture dries.

  6. Place the chicken breasts in the hot oil and cook until golden. Try to flip each chicken breast only once — when the side of the chicken starts to turn orange, you can flip.

  7. Lay the cooked chicken breasts on a paper-towel-lined plate until ready to serve.
