What is a good recipe for shish kabobs?
Mediterranean Chicken & Veggie Shish Kabobs
Prep time: 15 minutes
Cook time: 15-20 minutes
Yields: 4 servings
Ingredients:
* For the marinade:
* 1/4 cup olive oil
* 2 tablespoons lemon juice
* 1 tablespoon red wine vinegar
* 1 teaspoon dried oregano
* 1/2 teaspoon garlic powder
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* For the kabobs:
* 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
* 1 red onion, cut into 1-inch pieces
* 1 green bell pepper, cut into 1-inch pieces
* 1 yellow bell pepper, cut into 1-inch pieces
* 1 cup cherry tomatoes, halved
* 1/2 cup Kalamata olives, pitted and halved
Equipment:
* Skewers (metal or wooden)
* Large bowl
* Grill (gas or charcoal) or oven broiler
Instructions:
1. Make the marinade: In a large bowl, whisk together the olive oil, lemon juice, red wine vinegar, oregano, garlic powder, salt, and pepper.
2. Marinate the chicken: Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
3. Assemble the kabobs: Thread the chicken, onion, bell peppers, tomatoes, and olives onto skewers, alternating ingredients.
4. Cook the kabobs: Preheat your grill to medium heat. Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender. Alternatively, preheat oven broiler and broil kabobs for 5-7 minutes per side.
5. Serve: Serve the kabobs hot with your favorite sides, such as rice, couscous, or pita bread.
Tips:
* For a more flavorful marinade, use fresh herbs like rosemary, thyme, or basil instead of dried oregano.
* You can use other vegetables like zucchini, mushrooms, or red potatoes for your kabobs.
* If using wooden skewers, soak them in water for at least 30 minutes before threading the food onto them to prevent them from burning.
* To prevent the chicken from drying out, brush it with the marinade or a little olive oil while grilling.
* You can also serve the kabobs with a dollop of tzatziki sauce or a side of hummus.
