Why is beef gelatine not kosher?

Gelatin is a protein obtained by boiling skin, tendons, ligaments, and/or bones with water. It is used as a gelling agent in food, photography, and other industries.

Kosher gelatin is made from the bones and skin of kosher animals, such as cows, sheep, and goats. Beef gelatin is not kosher because it is made from the bones and skin of cows, which are not kosher animals.

In Judaism, animals that are considered kosher must have split hooves and chew their cud. Cows meet the first criterion but not the second, so they are not kosher.
