Why was Dutch chocolate made?

Dutch chocolate does not exist. The process in which chocolate becomes "Dutch" is called "dutching". Dutching is a process in which the cocoa solids in chocolate are treated with an alkali to reduce their acidity. This process gives Dutch chocolate a darker color, a smoother texture, and a more mellow flavor than untreated chocolate.
