Things You'll Need

  • 1 lb. lobster meat, steamed and shredded
  • 1 cup diced onion
  • 2 cloves of garlic, diced
  • 1/2 cup diced celery
  • 1/4 cup diced chipotle peppers
  • 16-oz. box instant stuffing mix
  • 1 egg
  • 1 cup sour cream
  • 1/4 cup extra virgin olive oil
  • 14-inch nonstick skillet
  • Large mixing bowl, at least 4-qt. capacity

Instructions

  1. Add lobster meat, onion, garlic, celery and peppers to a large mixing bowl.

  2. Add instant stuffing mix. Select a standard, cornbread-flavored stuffing mix.

  3. Crack a whole egg into the mixture and hand mix it throughout the dry ingredients. Add the sour cream to the mixture. This not only adds moisture for the stuffing mix to cook into the meat, but it adds a hearty flavor. Stir the mixture thoroughly with your hands until it is saturated with the egg and sour cream. The stuffing in the mixture will swell up and become soft as it binds to the other ingredients.

  4. Pour the oil into the skillet place it over medium-high heat. Let it heat up for 5 minutes.

  5. Scoop out a heaping tablespoon of the mixture and drop it in the pan. Press down on the ball of lobster and stuffing mixture with the underside of the spoon to flatten it into a patty shape. Do this firmly but gently. Let the patty sizzle on one side for 4 minutes. Flip over and repeat. This recipe makes approximately 12 bun-sized patties.
