### Ingredients

* 1 pound large shrimp, peeled and deveined

* 1/2 cup all-purpose flour

* 1/4 cup cornstarch

* 1 teaspoon baking powder

* 1/4 teaspoon salt

* 1/8 teaspoon black pepper

* 1 egg

* 1/2 cup shredded unsweetened coconut

* 1/4 cup panko breadcrumbs

* 1/4 cup vegetable oil

* Sweet and sour sauce, for serving

Instructions

1. In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper.

3. Add the shrimp to the egg mixture and toss to coat.
