How do you make coconut shrimp?
### Ingredients
* 1 pound large shrimp, peeled and deveined
* 1/2 cup all-purpose flour
* 1/4 cup cornstarch
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 1/8 teaspoon black pepper
* 1 egg
* 1/2 cup shredded unsweetened coconut
* 1/4 cup panko breadcrumbs
* 1/4 cup vegetable oil
* Sweet and sour sauce, for serving
Instructions
1. In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper.
2. In a separate bowl, whisk together the egg and water.
3. Add the shrimp to the egg mixture and toss to coat.
4. Dredge the shrimp in the flour mixture, shaking off any excess.
5. Heat the oil in a large skillet over medium heat.
6. Add the shrimp and cook until golden brown on all sides, about 2 minutes per side.
7. Transfer the shrimp to a paper towel-lined plate to drain.
8. In a shallow dish, combine the coconut and panko breadcrumbs.
9. Dip the shrimp in the coconut mixture to coat.
10. Place the shrimp on a baking sheet and bake in a preheated 400-degree oven for 5 minutes, or until heated through.
11. Serve the shrimp with sweet and sour sauce.
