Recipe for baked ziti pasta with no meat?

Baked Ziti (Vegetarian)

Servings: 6-8

Ingredients:

* 1 pound ziti pasta

* 1 (28 ounce) can crushed tomatoes

* 1 (15 ounce) can tomato sauce

* 1 (15 ounce) can tomato paste

* 1 teaspoon dried oregano

* 1/2 teaspoon garlic powder

* 1/4 teaspoon salt

* 1/4 teaspoon black pepper

* 1 (15 ounce) container ricotta cheese

* 1/2 cup grated Parmesan cheese

* 1/2 cup shredded mozzarella cheese

* 1 cup chopped fresh spinach (optional)

* 1/2 cup chopped fresh basil (optional)

Instructions:

1. Preheat oven to 375°F (190°C).

2. Cook the ziti according to package directions. Drain and set aside.

3. In a large saucepan, combine crushed tomatoes, tomato sauce, tomato paste, oregano, garlic powder, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.

4. In a medium bowl, combine ricotta cheese, Parmesan cheese, spinach (if using), and basil (if using). Stir to combine.

5. Spread a thin layer of tomato sauce in the bottom of a 9x13 inch baking dish.

6. Layer the cooked ziti on top of the sauce.

7. Spread the ricotta cheese mixture evenly over the ziti.

8. Top with the remaining tomato sauce.

9. Sprinkle with the mozzarella cheese.

10. Bake for 30-40 minutes, or until the cheese is melted and bubbly.

11. Let stand for 10 minutes before serving.

Tips:

* For a richer flavor, sauté some chopped onions and garlic in olive oil before adding the tomato sauce.

* You can also add other vegetables to the ziti, such as mushrooms, peppers, or zucchini.

* For a spicier dish, add a pinch of red pepper flakes to the tomato sauce.

* If you like, you can substitute the ricotta cheese with tofu or a vegan ricotta alternative.
