Making your own pasta is a fun and rewarding experience, and it's easier than you might think! Here's a basic recipe to get you started:

Ingredients:

For 2-3 servings of pasta, you will need:

- 2 cups (240g) all-purpose flour

- 1/2 teaspoon salt

- 3 large eggs

- 1 tablespoon (15ml) olive oil (optional)

Instructions:

1. Prepare the Dough:

- In a large bowl, combine the flour and salt.

- Make a well in the center of the flour and break the eggs into it.

- Using a fork, slowly whisk the eggs while incorporating the flour from the edges.

- Once most of the flour is incorporated, use your hands to knead the dough until it comes together and forms a smooth ball. It should not be sticky, but not too dry either.

- If the dough feels too dry, add a little bit of water, one teaspoon at a time, and continue kneading until desired consistency.

2. Rest the Dough:

- Cut the rested dough into 4 equal pieces. Work with one piece at a time, keeping the others covered with plastic wrap to prevent them from drying out.

- Flatten each piece of dough with your hands into a rough rectangle.

- Using a rolling pin, start rolling out the dough from the center, applying even pressure.

- Roll the dough until it's about 1-2 mm thick and cut into your desired pasta shapes, such as tagliatelle, fettuccine, or ravioli.

4. Cook the Pasta:

- Bring a large pot of salted water to a boil. Add the pasta and cook according to the desired doneness. Fresh pasta cooks quickly, so taste a piece after about 2-3 minutes to see if it's ready.

5. Serve:

- Drain the pasta and transfer it to a colander.

- Add your favorite pasta sauce or condiment and enjoy your homemade pasta!

Tips:

- To make colored pasta, add food coloring or natural ingredients such as spinach (green), carrots (orange), or squid ink (black) to the dough and knead it until evenly colored.
