Cellulose is a complex polysaccharide that is the primary structural component of plant cell walls. It is indigestible by humans because we lack the enzymes necessary to break down the beta-1,4-glycosidic bonds that link the glucose monomers together. In contrast, starch is a polysaccharide made up of glucose monomers linked by alpha-1,4-glycosidic bonds. Humans produce enzymes called amylases that can break down these bonds, allowing us to digest starch and absorb the glucose molecules.
