How to Make a Delicious Barbecue Brisket and a BBQ Brisket Sandwich

Some diners judge a good barbeque joint not by its ribs but by its brisket. Brisket is a cut of beef from the breast and chest area. It is very muscular, and the only way to truly make this piece of meat tender is to cook it slowly.

Things You'll Need

  • Smoker
  • Beef brisket
  • Dry rub:
  • 5 tablespoons paprika
  • 2 1/2 tablespoons salt
  • 2 1/2 tablespoons garlic powder
  • 2 1/2 tablespoons onion powder
  • 3 tablespoons brown sugar
  • 4 teaspoons black pepper
  • 3 teaspoons dried parsley
  • 2 teaspoons cayenne pepper
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 1/2 teaspoon hot chili powder

Instructions

  1. Make a dry rub for the brisket by mixing all of the ingredients in a large bowl. Apply generously to the brisket, making sure all of it is thoroughly covered.

  2. Preheat the smoker by following the individual smoker's instruction manual. Place the seasoned brisket in the smoker for eight to 10 hours at around 220 degrees.

  3. Remove the brisket and let it cool for 20 minutes before slicing. Save the pan drippings to pour over the top for extra flavor.

  4. Slice the meat in a thin to medium thickness. Pile it on a sliced and lightly toasted Portuguese roll or kaiser roll. Drizzle with the juices from the pan. You also can add English mustard, Swiss cheese and arugula and drizzle with extra virgin olive oil.
