  • Heavy duty aluminum foil
  • 4 tbsp. bottled Italian or vinaigrette salad dressing
  • Salt and pepper to taste
  • Basting brush
  • 2 kingfish steaks (1 ½ inches thick)
  • Tongs

Instructions

  1. Lay a piece of heavy aluminum foil over the grates of a grill, directly over the heat.

  2. Set the grill to medium heat.

  3. Coat both sides of the kingfish steaks with the salad dressing, brushing it on with the basting brush.

  4. Sprinkle both sides with salt and pepper.

  5. Place the kingfish steaks on the grill for five minutes.

  6. Turn the steaks, with the tongs, to grill the other side until the fish becomes opaque and flaky, about five to seven more minutes.
