This recipe is a festive and delicious dessert that combines the flavors of autumn with a touch of tartness.

Ingredients:
For the Pumpkin Spice Cake Layers:
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1/4 teaspoon ground cloves
* 1/2 cup unsalted butter, softened
* 1 1/2 cups granulated sugar
* 2 large eggs
* 1 teaspoon vanilla extract
* 1 cup canned pumpkin purée
For the Cranberry Sauce:
* 1 (12 ounce) bag fresh cranberries
* 1/2 cup granulated sugar
* 1/4 cup orange juice
* 1/4 cup water
For the Cream Cheese Frosting:
* 8 ounces cream cheese, softened
* 1/2 cup unsalted butter, softened
* 3 cups powdered sugar
* 1 teaspoon vanilla extract
For Assembly:
* 1/2 cup chopped pecans (optional)
Instructions:
1. Prepare the Pumpkin Spice Cake Layers:
* Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
* In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
* In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
* Gradually add the dry ingredients to the wet ingredients, alternating with the pumpkin purée, beginning and ending with the dry ingredients. Mix until just combined.
* Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
* Let the cakes cool in the pans for 10 minutes before inverting them onto wire racks to cool completely.
2. Prepare the Cranberry Sauce:
* Combine cranberries, sugar, orange juice, and water in a saucepan over medium heat. Bring to a boil, then reduce heat to low and simmer for 10-15 minutes, or until the cranberries have burst and the sauce has thickened.
* Remove from heat and let cool slightly before using.
3. Prepare the Cream Cheese Frosting:
* In a large bowl, beat together the cream cheese and butter until smooth. Gradually add the powdered sugar, beating until light and fluffy. Stir in the vanilla extract.
4. Assemble the Stack:
* Place one cake layer on a serving plate. Spread with a generous layer of cream cheese frosting, then top with a layer of cranberry sauce.
* Repeat with the remaining cake layer, frosting, and cranberry sauce.
* Finish by frosting the top and sides of the cake.
* Sprinkle with chopped pecans, if desired.
