How do you make potica?
Potica is a traditional Slovenian dessert bread that is made with a yeast dough and a variety of fillings. The dough is rolled out into a rectangle, spread with the filling, and then rolled up and placed in a loaf pan. The potica is then baked until golden brown.
Here is a recipe for potica:
Ingredients:
For the Dough:
- 1 cup warm milk
- 2 1/4 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 4 1/2 to 5 cups all-purpose flour
For the Filling:
- 1 cup walnuts, chopped
- 1 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 cup heavy cream
- 1 large egg white
Instructions:
1. In the bowl of a stand mixer fitted with the dough hook, dissolve the yeast in the warm milk. Let sit for 5 minutes, until the yeast is foamy.
2. Add the sugar, salt, butter, and eggs to the yeast mixture. Beat on low speed until combined.
3. Add the flour, one cup at a time, until the dough comes together and forms a ball. The dough should be soft and elastic, but not sticky.
4. Turn the dough out onto a lightly floured surface and knead for 5 minutes, until smooth.
5. Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.
6. While the dough is rising, make the filling. In a medium bowl, combine the walnuts, sugar, cinnamon, and cloves. Stir in the heavy cream and egg white until well combined.
7. Punch down the dough and divide it in half. Roll out each half into a 12-inch by 18-inch rectangle.
8. Spread the filling evenly over the dough.
9. Roll up the dough, starting from the long side. Pinch the edges of the dough to seal.
10. Place the poticas in two greased 9-inch loaf pans. Cover with plastic wrap and let rise in a warm place for 30 minutes, or until doubled in size.
11. Preheat the oven to 375 degrees F (190 degrees C).
12. Bake the poticas for 30-35 minutes, until golden brown.
13. Let the poticas cool completely before slicing and serving.
