How to Cook Slow-Cooker Crockpot Pulled Pork Barbecue

Slow cookers are great for preparing meals ahead of time with ease. This recipe is for a tender pulled pork barbecue. The finished meat can be eaten as is or used as filling for tortillas, enchiladas or tamales.

Things You'll Need

  • Slow Cooker or Crockpot
  • 4 boneless pork loin chops (thick)
  • 1 red pepper
  • 2 stalks celery
  • 1 medium onion
  • Garlic
  • Black pepper
  • Olive oil
  • Chicken broth
  • Canned chipotle chile peppers in adobo sauce
  • Lime juice

Instructions

  1. Chop red peppers, garlic, celery and onion and place in slow cooker. (One red pepper, 2 cloves garlic, 2 stalks celery, 1 medium onion).

  2. Season pork chops on both sides with salt and pepper. Place 1-2 tablespoons of olive oil in pan. When oil is hot, place pork chops in hot oil and cook 3-4 minutes on each side or until brown.

  3. Place browned pork chops in slow cooker on top of the vegetables. Mix together 1 cup chicken broth, 1/4 cup lime juice, 4 tablespoons chipotle peppers and pour over pork chops.

  4. Cover slow cooker with lid and cook on low for 6-7 hours or high for 3-4 hours.

  5. Remove pork from slow cooker, allow to cool and pull by hand to shred.
