How to Make Cauliflower in a Crock Pot

It is the experience of many mothers that children will eat any vegetable if it's covered in cheese. This is an easy, end of the week, one-dish meal. The main ingredient is cauliflower, but you can create many combinations by the addition of refrigerator leftovers. And what could be easier than throwing all the ingredients in a crock pot and forgetting about it?

Things You'll Need

  • Crock pot 3 cups rice 2 (10 oz.) packages cauliflower, frozen 1 small onion, chopped 1 (10 oz.) can cheddar cheese soup 1/2 cup cheddar cheese, shredded Leftovers (see tips, below)

Instructions

  1. Take out and place the cauliflower in the refrigerator, overnight, so it will thaw.

  2. Spray the inside of the crock pot with cooking oil spray. Pour the rice into the crock pot.

  3. Place the thawed cauliflower and onion in the crock pot, on top of the rice. Add any refrigerator leftovers (see tips below). Pour the can of cheddar cheese soup and 1/2 cup water into the crock pot.

  4. Set the crock pot on low for 4 to 5 hours. Right before serving, sprinkle the crock pot cauliflower dish with shredded cheddar cheese.
