What is the recipe for Guyanese curry chicken?

Ingredients

- 2 lbs of boneless, skinless chicken breasts or thighs, cut into 1-inch pieces

- 1 medium yellow onion, thinly sliced

- 1 medium green bell pepper, thinly sliced

- 1 medium red bell pepper, thinly sliced

- 3 garlic cloves, minced

- 1 tsp of grated fresh ginger

- 1 tsp of ground turmeric

- 1 tsp of ground cumin

- 1/2 tsp of ground coriander

- 1/4 tsp of cayenne pepper

- 1/2 cup of plain yogurt

- 2 tbsp of vegetable oil

- Salt and pepper to taste

- 1/4 cup of chopped fresh cilantro leaves

Method

1. In a large bowl, combine the chicken pieces, half the onion, half the green bell pepper, half the red bell pepper, garlic, ginger, turmeric, cumin, coriander, cayenne pepper, and yogurt. Mix well to coat the chicken. Cover and marinate in the refrigerator for at least 30 minutes or overnight.

2. Heat the vegetable oil in a large skillet over medium heat. Add the marinated chicken and cook until browned on all sides.

3. Add the remaining onion, green bell pepper, red bell pepper, and salt and black pepper to taste and cook until the vegetables are softened.

4. Serve hot garnished with chopped fresh cilantro leaves.

Guyanese Curry Chicken Tips:

- For a spicier dish, add more cayenne pepper to the marinade.

- If you don't have plain yogurt, you can also use coconut milk.
