How many pounds of chicken leg quarters to feed 300 people?
A good rule of thumb is to plan on 1/2 to 3/4 pound of meat per person. Since chicken leg quarters are fairly large, you can probably count on about 1/2 pound of meat per person, or 150 pounds of chicken leg quarters total.
