How do you make bungkaka?

Bungkaka is a Filipino dish made of banana leaves filled with a mixture of shredded coconut meat, sugar, and roasted peanuts. It is a popular snack and is often sold at street stalls in the Philippines.

Here is a recipe for bungkaka:

Ingredients:

- 1 cup mature grated coconut meat

- 2/3 cup sugar

- 1/2 cup roasted peanuts, chopped

- 1 small piece peeled ginger juice (optional)

- 10 pieces banana leaves, young or fully grown

Instructions:

1. In a large bowl, mix together the coconut meat, sugar, peanuts, and ginger juice (if using).

2. To prepare the banana leaves, cut them into approximately 12-inch squares. Remove the center vein and wipe them clean with a damp cloth.

3. Place about 2 tablespoons of the filling in the center of each banana leaf square. Fold the bottom of the leaf up and over the filling. Fold the sides of the leaf in, and then fold the top down to enclose the filling. Secure the bungkaka by tying it closed with a piece of cooking twine or string.

4. Bring a large pot of water to a boil. Place the bungkaka in the boiling water and cook for about 15-20 minutes, or until the filling is cooked through and the banana leaves are softened.

5. Remove the bungkaka from the water and drain them on a paper towel-lined plate.
