Instructions:
1. To make the cookies, preheat the oven to 375 degrees F (190 degrees C).
2. Line a baking sheet with parchment paper.
3. In a large bowl, cream together the butter and sugar until light and fluffy.
4. Beat in the egg and vanilla extract.
5. In a separate bowl, whisk together the flour, baking soda, and salt.
6. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
7. Drop the dough by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
8. Bake for 10-12 minutes, or until the edges are just beginning to brown.
9. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
10. To make the frosting, beat together the butter and confectioners' sugar until light and fluffy.
11. Add the milk and vanilla extract and mix until smooth.
12. If desired, add food coloring to achieve the desired color.
13. Once the cookies are completely cool, frost them with the frosting.
