Lipolysis

Lipolysis is the breakdown of fats into fatty acids and glycerol. It is a natural process that occurs in the body to provide energy, but it can also be caused by bacteria and other microorganisms, leading to food spoilage. Lipolytic bacteria produce enzymes called lipases, which break down the ester bonds in triglycerides, releasing fatty acids. These fatty acids can then react with oxygen to form peroxides, which have a bitter taste and unpleasant odor. Lipolytic bacteria are commonly found in dairy products, meat, and fish, and can cause spoilage at refrigeration temperatures. To prevent lipolysis, food can be stored in airtight containers, at low temperatures, and with the addition of antioxidants.
