How to Make Bison (Buffalo) Roast: Crockpot Recipe
Bison, or buffalo, is a healthy red meat with less fat per ounce than beef. Buffalo can be prepared in beef recipes with similar results. Below is an excellent recipe for preparing bison roast in the crockpot. Bison rump, chuck, blade, or round stake can be used in this recipe.
Things You'll Need
- Slow cooker or crockpot
- 1 bison roast 3-4 pounds
- 2 tablespoons olive oil
- 1 1/2 cups chopped onion
- 1 1/2 cups chopped celery
- 1 cup sliced baby carrots
- 3 cloves garlic
- 2 tablespoons flour
- 2 cups diced tomatoes
- 5 medium potatoes sliced
- 3 tablespoons parsley
- 1 tsp salt
- 1/2 tsp dried thyme
- 1/2 tsp marjoram
- 1/2 tsp dried bay leaf
- 1/2 tsp pepper
Instructions

Put the olive oil in the slow cooker. Add the bison roast and turn it a few times to coat the roast and the bottom of the cooker with oil.

Chop the onion, celery, garlic and tomatoes in a food processor. Add them to the crockpot. I use whole tomatoes from the garden, or freezer, but you can also use diced tomatoes from a can.

Peal the potatoes. Slice the potatoes and carrots 1/4 thick. Add them to the slow cooker.

Add the remaining ingredients to the crockpot and stir well.

Cook the roast on high for 3 1/2 hours, or on low for 6 hours.

Slice the roast and enjoy.
