What is the source of sugar for fermentation?
Sugar is derived from starch that has been broken down into glucose. Starch can be found in a variety of sources such as corn, potatoes, wheat and barley which is used in the production of beer and whisky, as well as grapes, the common source of sugar for winemaking. Molasses a syrup produced during sugar manufacturing, can also be used as a sugar source. For brewing, adjunct such as rice, and unmalted barley can be used to source additional sugars.
