Ingredients:
For the Cocoa-Mint Buttercream:
- 1 cup (2 sticks) unsalted butter, softened
- 3 cups confectioners’ sugar
- 1/3 cup unsweetened cocoa powder
- 2 teaspoons vanilla extract
- 1 teaspoon peppermint extract
For the Hot Cocoa Cookies:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/4 cup unsweetened cocoa powder
Instructions:
To make the Cocoa-Mint Buttercream:
1. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium speed until light and fluffy, about 3 minutes.
2. Add the confectioners’ sugar and cocoa powder and beat on low speed until combined.
3. Increase the speed to medium and beat until fluffy, about 2 minutes.
4. Add the vanilla and peppermint extracts and beat until combined.
To make the Hot Cocoa Cookies:
1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, and salt.
3. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugars together on medium speed until light and fluffy, about 3 minutes.
4. Add the eggs one at a time, beating well after each addition.
5. Add the vanilla extract and beat until combined.
6. Reduce the speed to low and add the flour mixture in three additions, alternating with the cocoa powder and beginning and ending with the flour.
7. Drop the dough by rounded tablespoons 2 inches apart onto the prepared baking sheet.
8. Bake for 10-12 minutes, or until the edges are just beginning to brown.
9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
To assemble the Hot Chocolate Teacups:
1. Using a small spoon or piping bag fitted with a small round tip, pipe a ring of the Cocoa-Mint Buttercream around the edge of each cookie.
2. Fill the center of each cookie with additional buttercream.
3. Top each cookie with a mini marshmallow and garnish with a sprinkle of cocoa powder and chocolate shavings.
