Do I Need to Cook a Coquito Drink?
A creamy, coconut-flavored drink, coquito appears during the holiday season, particularly in Puerto Rico. While this coconut eggnog is traditionally served chilled with rum, brandy or whisky, it can be served warm or without the alcohol. Standard ingredients include coconut milk, condensed milk, evaporated milk, cinnamon and egg yolks. Raw egg yolks can cause problems if they're not handled properly, but this drink is generally safe for healthy adults to consume.

Fresh eggs can contain Salmonella enteritidis, a type of bacteria that causes foodborne illness. These bacteria are most frequently found in the egg yolk, the part of the egg used to make coquito. To avoid making your family and friends sick -- particularly if they suffer from a chronic illness or are very young, very old or pregnant -- you need to be extra cautious during preparation of the drink.
Cooking the Eggs

Some coquito recipes call for uncooked egg yolks, but you should alter the recipe to guarantee a safe beverage. Be sure to cook the egg and milk mixture until the eggs reach 160 degrees Fahrenheit. Either measure the mixture's temperature with a food thermometer, or cook the mixture over a low-medium heat until it completely coats the back of a spoon. Cooking the eggs kills the potentially harmful bacteria.

If you don't have the time or the desire to cook the egg yolks for your coquito, you have several safe options. You can make the drink with commercially prepared egg substitute, pasteurized eggs or eggnog.

Whether you serve it warm or chilled, don't let your egg-based coquito sit out for more than two hours before sticking it in the refrigerator.
