The specific gravity of apple cider should be between 1.050 and 1.060 for optimal fermentation. A specific gravity of 1.002 is too low, and the cider will not ferment properly.

Here is a general guideline:
For every gallon of cider, add:
- 1 pound of sugar to increase specific gravity by 0.010.
- 2 pounds of sugar to increase specific gravity by 0.020.
- 3 pounds of sugar to increase specific gravity by 0.030.
- So, for example, to increase the specific gravity of a 5-gallon batch of apple cider from 1.002 to 1.055, you would add 17.5 pounds of sugar. (5 gallons x 0.053/0.01)
Once you have added the sugar, stir the cider well to dissolve it. Then, take a new specific gravity reading to make sure that it is at the desired level.
If it is not, adjust the amount of sugar accordingly and repeat the process.
