Ingredients for Guava and Cheese Pastries:
For the Dough:
- 3 cups (420 grams) all-purpose flour
- 1/2 teaspoon salt
- 1 cup (226 grams) unsalted butter, cold and cut into small pieces
- 1/4 cup (60 ml) ice-cold water
For the Filling:
- 1 cup (250 grams) fresh guava paste, cut into small pieces
- 1 cup (200 grams) cream cheese, softened
Egg Wash:
- 1 egg, beaten
Instructions:
1. Make the Dough:
- In a large mixing bowl, whisk together the flour and salt.
- Add the cold butter pieces and use your fingers or a pastry cutter to work the butter into the flour mixture until it resembles coarse crumbs.
- Gradually add the ice-cold water, one tablespoon at a time, mixing until the dough just comes together and forms a ball. Avoid over-mixing.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes, or up to overnight.
2. Prepare the Filling:
- In a medium bowl, combine the guava paste and cream cheese.
- Use a fork or a spatula to mix the ingredients until they are well combined and form a smooth filling.
- Set aside.
3. Assemble the Pastries:
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the dough to about 1/4 inch (6 mm) thickness.
- Cut out circles using a cookie cutter or a glass.
- Place a heaping teaspoon of the guava and cheese filling in the center of each dough circle.
- Fold the dough in half, making a half-moon shape. Use a fork to crimp the edges to seal them closed.
- Repeat the process until all the dough and filling are used up.
4. Egg Wash and Baking:
- Arrange the filled pastries on the prepared baking sheet, leaving a little space between them.
- Brush the pastries with the beaten egg wash.
- Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown.
5. Cooling and Serving:
- Remove the pastries from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy the guava and cheese pastries warm or at room temperature.
