How many types of pastry are there?
There are three main categories of pastry:
- Shortcrust pastry is made with flour, salt, and fat (such as butter or lard) that is worked together until it resembles shortbread crumbs. It is then mixed with water to form a dough. Shortcrust pastry is used for pies, tarts, and quiches.
- Flaky pastry is made with flour, salt, fat (such as butter or margarine), and water. It is made by folding and rolling the dough multiple times, which creates layers of fat between the layers of dough. Flaky pastry is used for croissants, puff pastries, and danishes.
- Choux pastry is made with flour, salt, water, and butter that is brought to a boil and then mixed with eggs. The mixture is then piped into shapes and baked. Choux pastry is used for éclairs, cream puffs, and profiteroles.
