How do you cook a mealy pudding exactly?
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 cups water
- 1/4 cup (1/2 stick) unsalted butter, cut into small pieces
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup dried cranberries
- 1/4 cup golden raisins
- 1/4 cup chopped pecans
Instructions:
1. In a large saucepan, bring the water, butter, sugar, and salt to a boil over medium-high heat.
2. Gradually whisk in the flour until the mixture forms a thick dough.
3. Reduce the heat to low and cook the dough for 1 minute, or until it is smooth and no longer sticky.
4. Remove the saucepan from the heat and stir in the vanilla extract, cranberries, raisins, and pecans.
5. Pour the mixture into a 9-inch square baking dish and smooth the top.
6. Bake the pudding in a preheated 350 degree F (175 degree C) oven for 30-35 minutes, or until it is golden brown and a toothpick inserted into the center comes out clean.
7. Let the pudding cool for 15 minutes before serving.
Tips:
- To make a chocolate mealy pudding, add 1/2 cup of unsweetened cocoa powder to the flour mixture.
- For a fruity mealy pudding, add 1 cup of your favorite fresh or dried fruit to the batter.
- Mealy pudding can be served warm or cold. If you are serving it cold, let it cool completely before refrigerating it.
- Mealy pudding can be made ahead of time and reheated in the oven or microwave.
