Can i substitute evaporated milk for cream when making brulee?
Evaporated milk is not a suitable substitute for heavy cream when making crème brûlée. Heavy cream has a much higher fat content than evaporated milk, which is necessary for the custard to set properly. Crème brûlée made with evaporated milk will be runny and will not have the same rich, creamy flavor as crème brûlée made with heavy cream.
If you do not have heavy cream on hand, you can try using a mixture of whole milk and butter. Use 1 cup of whole milk and 1/4 cup of unsalted butter, melted. This will not be an exact substitute for heavy cream, but it will work in a pinch.
