Pumpkin Spice Cookies with Cream Cheese Frosting

Ingredients:
For the cookies:
* 1 cup (2 sticks) unsalted butter, softened
* 1 cup granulated sugar
* 1 cup packed light brown sugar
* 2 large eggs

* 1 cup canned pumpkin puree
For the frosting:
* 8 ounces cream cheese, softened
* 1/2 cup (1 stick) unsalted butter, softened
* 3 cups powdered sugar
* 1 teaspoon vanilla extract
* 1/4 cup milk
* Pinch of salt
Instructions:
Make the cookies:
1. Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
2. In a large bowl, cream together butter and sugars until light and fluffy.
3. Beat in eggs one at a time, then stir in vanilla extract, pumpkin pie spice, cinnamon, and salt.
4. In a separate bowl, whisk together flour and pumpkin puree. Gradually add dry ingredients to wet ingredients, mixing until just combined.
5. Drop by rounded tablespoons onto prepared baking sheets, leaving about 2 inches between each cookie.
6. Bake for 10-12 minutes, or until edges are golden brown.
7. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Make the frosting:
1. In a large bowl, beat cream cheese and butter together until smooth.
2. Add powdered sugar, vanilla extract, milk, and salt, and beat until smooth and creamy.
Assemble the cookies:
1. Once cookies are completely cooled, frost with the cream cheese frosting.
