Are small marshmallows just big compressed?

Small marshmallows and big marshmallows are made in slightly different ways. Small marshmallows are made by whipping air into a mixture of sugar, corn syrup, water, and gelatin, then pouring the mixture into molds and letting it cool and set. Big marshmallows are also made by whipping air into a mixture of sugar, corn syrup, water, and gelatin, but instead of being poured into molds, the mixture is extruded through a tube into long strands, which are then cut into individual marshmallows. The difference in the manufacturing process gives big marshmallows a denser, chewier texture than small marshmallows.
