Difference between a jelly roll pan and cookie sheet?

Jelly Roll Pan

- Rectangular in shape

- Sides are 1 inch to 1 ½ inches high

- Commonly utilized for baking pastries such as jelly rolls and Swiss rolls

- Due to its high sides and even heat distribution, it also comes in handy for roasting vegetables, making sheet pan dinners, and cooking meat

Cookie Sheet

- Rimless or low sides

- Usually comes with a slightly curled lip

- Can be used for baking cookies (as the name suggests), sheet cakes, and even pizza

- Also great for drying out baked meringues and making toffee

- Some cookie sheets have an additional coating to prevent food from sticking
