How to Make Diabetic (Sugar Free) Chocolate Chip Cookies
If you're trying to cut down on sugar, you can still make delicious chocolate chip treats. This easy recipe yields about 30 cookies.
Things You'll Need
- 1/4-cup margarine
- 1 tbsp. granulated fructose
- 1 egg
- 1 tsp. vanilla extract
- 3/4-cup flour
- 1/4-tsp. salt
- 1/2-cup mini semi-sweet chocolate chips
Instructions

Preheat the oven to 375 F.

Cream together the margarine and fructose. Add the egg, water and vanilla to the mixture and stir well.

Combine the flour, backing soda, and salt in a sifter; sift the dry ingredients into the cream mixture, stirring until thoroughly blended.

Stir in the chocolate chips, again mixing well.

Drop teaspoonfuls of the mixture onto a very lightly greased cookie sheet. Try to keep the cookie drops 1 to 2 inches apart so they have room to expand.

Bake at 375 F. for 8 to 10 minutes; less cooking time will yield softer cookies, while longer will result in crunchier ones.
