How to Use Choclate Chip Muffin Mix to Make Cookies

When you're running short on time and want to make a batch of chocolate chip cookies, you can skip several of the measuring and mixing steps by using packaged chocolate chip muffin mix. These pre-packaged mixes use many of the same ingredients as cookies -- flour, sugar and chocolate chips. Instead of following the package instructions for preparing muffins, make some substitutions to turn the fluffy muffins into chewy cookies.

Things You'll Need

  • 1 (6 to 7 oz.) package chocolate chip muffin mix
  • Hand or stand mixer
  • 1/4 cup butter, softened
  • 1 egg
  • Baking sheet
  • Spatula
  • Cooling rack

Instructions

  1. Preheat the oven to 375 degrees F.

  2. Beat the muffin mix, butter and egg together with a hand or stand mixer until a dough forms.

  3. Drop the cookie dough by 1 tsp. amounts on an ungreased baking sheet. Leave 2 inches of space between dough balls.

  4. Bake the cookies for 8 to 12 minutes or until lightly browned.

  5. Cool the cookies on the pan for 2 minutes.

  6. Transfer the cookies with a spatula to a cooling rack to finish cooling to room temperature.
