How to Make Christmas Coal Cookies (5 Steps)

Things You'll Need

  • 1 cup softened unsalted butter
  • 1 cup granulated sugar
  • 1/2 teaspoon table salt
  • 1 box hot cocoa mix (8 pouches)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3 cups all purpose flour
  • 1 bag cubed caramels
  • Sea salt

Instructions

  1. Preheat oven to 350 degrees F and line a cookie sheet with wax paper.

  2. Use a mixer to blend flour, butter, baking soda and baking powder in a large bowl.

  3. Add the sugar, table salt and hot cocoa into the bowl and mix until fluffy. Add eggs one at a time. Once eggs are fully mixed in, add the vanilla extract and mix until all ingredients are blended to create a thick dough.

  4. Scoop out enough dough and roll between your hands to shape into a sphere the size of a golf ball. Flatten the ball out a bit, place the caramel in the center, and roll the dough back into a ball so the dough surrounds the caramel core. Place 2 inches apart on the cookie sheet.

  5. Bake for 12 minutes exactly. Carefully lift the wax paper with the cookies off the sheet. Lightly sprinkle with sea salt while they’re hot. Cool for about 5 minutes before you remove them from the paper. Serve warm.
