How can you use the power of evaporation to keep chocolate-covered candy from melting?
You can't directly use evaporation to *prevent* chocolate-covered candy from melting. Evaporation is the process of a liquid turning into a gas, and it requires heat energy. This means that if you're trying to keep something from melting, adding more heat through evaporation is counterproductive.
However, you can use a related principle called evaporative cooling to help *slow down* the melting process. Here's how:
1. Wrap the candy in a damp paper towel or cloth: The water in the towel will start to evaporate, absorbing heat from the surrounding environment (including the candy). This will create a slightly cooler microclimate around the candy, slowing down the melting process.
2. Place the candy in a cool, dry place: Evaporation happens faster in drier, warmer environments. By placing the candy in a cool, dry place, you'll slow down the rate of evaporation, and thus minimize the heat absorbed from the candy.
Important Note: Evaporative cooling is a temporary solution. It won't completely prevent melting, but it can help buy you some time. For long-term storage, it's best to keep chocolate-covered candy in a cool, dry place, ideally refrigerated.
