How do you make potato candy?

Ingredients:

- 1 pound russet potatoes, peeled and cubed

- 1 cup sugar

- 1/2 cup light corn syrup

- 1/4 cup water

- 1 teaspoon vanilla extract

- 1/4 teaspoon salt

- 1/4 cup chopped nuts (optional)

Instructions:

1. In a large saucepan, combine the potatoes, sugar, corn syrup, water, vanilla extract, and salt. Bring to a boil over medium heat, stirring constantly.

2. Reduce heat to low and simmer for 1 hour, or until the potatoes are very tender and most of the liquid has evaporated. Stir occasionally to prevent sticking.

3. Use the back of a spoon or potato masher to mash the potatoes until smooth. Add the nuts, if desired.

4. Pour the potato candy onto a lightly oiled 9x13-inch baking dish. Smooth the top with a spatula.

5. Let cool completely, then cut into squares.
