How to Use Copper Cooking Pots for Candy

Unlined copper pots are often used to make sugar-based candy (such as caramel) because the pots conduct heat evenly and can withstand high temperatures with ease. However, working with copper pots means following some rules. Because copper conducts heat so well, candy can burn in these pots if it is not constantly monitored. Thick, high-quality copper pots are best to use for candy-making to ensure that the delicate sugar mixture doesn't separate or crystallize while cooking.

  • Thick copper pot
  • Mild dish soap
  • Soft rag or sponge
  • Wooden spoon
  • Candy thermometer

Instructions

  1. Wash the copper pot before making candy in it, as even a little bit of dirt, dust or grease can disrupt the candy-making process. Rinse the pot in warm water and use mild dish soap and a soft sponge or rag. Dry the pot thoroughly before use.

  2. Place the pot on the stove and add the candy ingredients as soon as you turn on the heat. Because they conduct heat so evenly and quickly, copper pots do not need to preheat before use.

  3. Cook the candy over low heat, even if the recipe calls for a higher temperature. Candy cooks (and burns) quickly in a copper pot, so it's better to take things as slowly as possible.

  4. Stir the candy constantly with a wooden spoon.

  5. Monitor the candy with a candy thermometer throughout the cooking process. When the candy reaches the temperature prescribed by the recipe, remove it from the heat and the pan immediately.
