Container Tips

• Sublimation, known by its more common name, "freezer burn," occurs when ice crystals in ice cream are exposed to cold air. Counteract this process by reducing the amount of unused space between the ice cream and the top of the container. Before placing it in the freezer, stretch a layer of plastic wrap across the top layer of ice cream; then cover with a tight-fitting lid. If all the ice cream is not consumed at the same time, transfer remaining portions to smaller containers. This keeps out the air that would otherwise fill empty space in the larger container.

Placement and Temperature

• Store ice cream toward the back of the freezer compartment, away from warm air that enters each time the door opens. Put other frozen items above and beside it for extra safeguards. Ice cream needs to remain at or below 0 degrees Fahrenheit to maintain its creamy consistency and flavor, reports Max Falkowitz of Serious Eats. Purchase or create ice cream in small batches that are easily consumed within two weeks if possible, reducing the chance of freezer burn occurring.
