How to Make Fondant Dolphins

Fondant can turn a simple cake into an elaborate piece of art. The sugar, water and cream mixture makes a delicious, sweet, pliable icing. Cake enthusiasts can use fondant to cover an entire cake or create candy shapes. Fondant sculptures can range from simple forms, like hearts and flowers, to complex models that complement the theme of a party. The decorator can choose whether to leave fondant plain white or add coloring and flavor. When refrigerated and covered, fondant remains fresh for up to three months.

Instructions

  1. Rub some cooking fat into your hands to help you to mold the fondant. Using your hands, roll the blue fondant into a ping pong-size ball.

  2. Turn the ball into a sausage shape that gets progressively thinner. Place the fondant in the palm of one hand and press the wider end into a nose shape with a finger from your other hand.

  3. Cut the sponge into a piece about one-third of the width of the dolphin. Place the sponge under the middle of the dolphin's body, allowing the fondant to naturally form a curved shape.

  4. Pinch the opposite end to the nose flat. Push it toward the body and continue pinching the fondant until you create the shape of a dolphin's tail. Smooth the edges to remove any fingermarks.

  5. Carve a mouth, just below the nose, using the palette knife. Begin at the center and cut two lines on either side. Cut an air hole on the back of the dolphin, just beyond the head, using the end of the paintbrush.

  6. Create indents in the head, using the ball tool, where you want to position the dolphin's eyes. Dab a drop of water into each eye socket with the paintbrush. Roll two balls with the white fondant, the size of the small end of the ball tool. Position these into the indents on the head and flatten.

  7. Smear a small amount of water on the white fondant, using the paintbrush. Roll two balls with the black fondant, half the size of the white fondant. Ensure they are both equal size and position them on the eyes using your finger tip.

  8. Roll three balls of blue fondant to 1/2 inch across. Take the first ball and place it on a flat surface. Pinch it gently between your thumb and forefinger. Push the ball with a finger from your other hand to create a triangle shape. Compress the fondant into the work surface to form a flat triangle.

  9. Place the triangle on one of its sides and press gently to make this side smooth. Mold the triangle with your fingertips to form a fin shape. Repeat this process with the other two balls. Use the paintbrush to apply a small amount of water to the dolphin's body and attach the fins.

  10. Add white dusting powder to the entire body of the dolphin with the pastry brush. Leave the fondant for 24 hours to allow it to dry completely.
