How to Make Red Velvet Cheesecake (5 Steps)

Things You'll Need

  • 1 1/2 cups graham cracker or chocolate cookie crumbs
  • 3 tsp brown or granulated sugar
  • 1/2 cup butter
  • 32 oz cream cheese
  • 1 1/2 cups sugar
  • 4 eggs
  • 3 tbsp unsweetened cocoa
  • 1 cup sour cream
  • 1/2 cup buttermilk
  • Vanilla extract
  • 1 tsp white vinegar
  • 2 oz red food coloring
  • 2 cups powdered sugar
  • 9 inch springform pan
  • Mixer
  • Bowl

Instructions

  1. Turn oven on to 325 degrees. Mix crushed cookie crumbs and brown sugar together. Melt 1/4 cup butter and add to the mixture. Spread over the bottom of the springform pan.

  2. Put 24 oz of cream cheese in a bowl. Add 1 1/2 cups sugar. Set your mixer to medium-low and mix sugar and cream cheese until smooth, about 1 minute.

  3. Add eggs one at a time while continuing to mix. Add cocoa, sour cream and buttermilk. Add 1/2 tbsp vanilla extract. Add red food coloring and vinegar. Mix on medium-low until all ingredients are blended thoroughly.

  4. Pour mixture into springform pan. Bake for 1 hour. Remove from oven and allow to cool. Once cheesecake is cool, put it in the fridge overnight.

  5. Mix 1/3 cup softened butter and 8 oz cream cheese for the topping just before you are ready to serve the cake. Use the medium setting on your mixer. Add powdered sugar gradually, mixing it in thoroughly. Add 1 tsp vanilla extract and mix. Spread mixture over the top of the cheesecake, and serve.
