How to Make Homemade Vanilla Cakes

There is really no pride in baking cakes these days. Simply open a box of $0.88 cake mix from any grocery store and in less than 5 minutes you've got it in the pan and ready for the oven. Baking from scratch, however, requires a little more skill and gives you true bragging rights. If you can bake a cake from scratch, you own the day (and the kitchen). Here you will find a recipe that is sure to please everyone on your list without too much stress on your part.

Things You'll Need

  • 2 eggs
  • 1 cup sugar
  • 1 tsp. vanilla
  • 1 stick butter
  • 1 and 1/2 cups all purpose flour
  • 1 and 1/4 tsp. baking powder
  • 9-by-13 inch rectangular cake pan
  • Electric mixer
  • Spatula
  • Large spoon
  • Sifter

Instructions

  1. Have all your ingredients within reach. Make sure you also have your measuring cups and spoons, mixing bowls, spatula and spoon ready as well. By setting them out ahead of time, you will save yourself unnecessary steps.

  2. Do your prep work before you begin mixing. This includes sifting together your flour and baking powder and preheating the oven to 350 degrees F. Follow by greasing your cake pan then flouring it. Make sure you cover the entire pan, including the sides, with the flour. Shake any excess flour into the trash.

  3. Begin mixing by creaming your butter and sugar until almost fluffy. Add the eggs and vanilla and mix well. Slowly add the flour and baking powder. Mix well for 2 minutes.

  4. Prepare to bake. Gently pour the batter into the pan and place on the middle rack in the oven. Make sure there are no heavy footsteps in the kitchen or your cake will fall (sink in the middle). Bake for 23 to 26 minutes. If a toothpick inserted into the middle comes out clean, your cake is ready to remove from the oven. Enjoy.
