Pineapple Upside Down Cake in a Skillet
This recipe utilizes a cast iron skillet for a beautiful and flavorful pineapple upside down cake.
Ingredients:
For the Pineapple Layer:
* 1 tablespoon butter
* 1/2 cup packed brown sugar
* 1/4 cup chopped pecans (optional)
* 1 (20 oz) can crushed pineapple, drained
For the Cake Batter:
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 cup (1 stick) unsalted butter, softened
* 1 1/4 cups granulated sugar
* 2 large eggs
* 1 teaspoon vanilla extract
* 1/2 cup buttermilk
For the Glaze (optional):
* 1/4 cup butter
* 1/4 cup brown sugar
* 1/4 cup pineapple juice
Instructions:
1. Preheat: Preheat oven to 350°F (175°C).
2. Prepare the Skillet: Grease a 10-inch cast iron skillet with butter.
3. Make the Pineapple Layer: In the prepared skillet, melt the butter over medium heat. Sprinkle the brown sugar evenly over the melted butter, followed by the pecans (if using). Arrange the drained pineapple slices in a single layer over the sugar mixture.
4. Make the Cake Batter: In a large bowl, whisk together the flour, baking soda, and salt.
5. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
7. Assemble the Cake: Pour the cake batter over the pineapple layer in the skillet.
8. Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
9. Cool: Let the cake cool in the skillet for 10 minutes before inverting onto a serving plate.
10. Make the Glaze (optional): While the cake is cooling, combine the butter, brown sugar, and pineapple juice in a small saucepan over medium heat. Bring to a simmer, stirring constantly, until the sugar dissolves and the mixture thickens slightly. Drizzle the glaze over the inverted cake.
Tips:
* If you don't have a cast iron skillet, you can use a regular 10-inch skillet, but the cake might not brown as nicely.
* You can use fresh pineapple chunks instead of canned, just be sure to drain them well.
* Feel free to add other toppings to your cake, such as maraschino cherries, chopped nuts, or coconut flakes.
* To make this cake even more decadent, top it with whipped cream or ice cream.
