How to remove lemon pith from peel?
Step 1: Zest the lemon
Using a Microplane or zester, carefully remove the zest from the lemon. Zest only the yellow outer layer of the peel, avoiding the white pith underneath.
Step 2: Cut the lemon in half
Slice the lemon in half lengthwise.
Step 3: Remove the pith
Use a paring knife to carefully remove the white pith from each half of the lemon peel. Work your way around the edges of the pith, following the curve of the lemon.
Tips
- To make it easier to remove the pith, you can first freeze the lemon for 30 minutes to 1 hour.
- If you're having trouble removing the pith with a knife, you can also use a spoon.
