How to Keep Sliced Peaches Fresh (4 Steps)

Whole peaches have a short shelf life whether refrigerated or stored in the pantry. Slicing them further shortens storage time because they quickly brown from oxidation, which occurs when exposed to air. An acid solution prevents browning without compromising the flavor or quality of the fruit. It's best to slice peaches immediately before serving, but with proper preparation you can store slices for a short length of time.

Things You'll Need

  • Bowl
  • 2 quarts water
  • 1/2 teaspoon ascorbic acid or 2 tablespoons lemon juice
  • Storage container
  • Lid or plastic wrap

Instructions

  1. Fill a bowl with 2 quarts water and mix in 1/2 teaspoon of ascorbic acid powder or 2 tablespoons of lemon juice.

  2. Dip the peach slices in the prepared water, coating each slice thoroughly.

  3. Place the slices inside a plastic storage container and secure the lid, or cover with a piece of plastic storage wrap.

  4. Store the sliced peaches in the refrigerator for three to five days. Use before they become limp or brown.
