Does banana brown faster than an apple?

Bananas typically brown faster than apples. This is because bananas produce more ethylene, a plant hormone that speeds up the ripening process. Ethylene causes the fruit to break down chlorophyll, the green pigment that gives unripe fruit its color, and produce carotenoids, the yellow and orange pigments that give ripe fruit its color. Apples also produce ethylene, but they produce less of it than bananas. This is why apples take longer to brown than bananas.
